Where could I get instructions for doing a cool project like this?

Millhoused,
The instructions for whittling these knives from a single piece were in a book, "Wood Carving and Whittling" published by Grosset & Dunlap, New York, given to me as a young carver in 1947. It is very likely out-of-print, but I could make a copy of the pages for you if desired.

Hehehe! Amazing! Your next project should be carving the Flexcut 'Carvin Jack'... That in it self would be a chalenge!
