I'm exactly the same as Deborah, I use the ultimate sharpener and ceramic stones. But being the tool junky I'm alway looking for something new.

Bob,
It depends....

For touching up a gouge or v-tool and power is available, that's what I use. For knives, I use a stone, followed by abrasive film, then leather strop. If it's really, really bad, I use a diamond to put the bevel back on the knife.

Like Colin, when I've worn out the bevel or have a nick--especially my v-tools, I send it to Rick Ferry or Dick Belcher in Ohio to make it all better. Sure saves me the aggrevation, time and lots of steel as I don't always get it right quickly.

I think many of us keep looking for an easier/surer way to sharpen. Look forward to reading the new posts on this topic.

I, like many who prefer sharpening with stones, use wet/water stones to set the bevel and oil stones to hone and polish the bevel. Since there was no way to select both I had to choose one which, IMO, skews the results of the poll.

I don't think it really matters what method you use as long as it works for you. The end results are the same. I have tried various methods except the scary sharp method and they all work. I perfer the diamond hones for hand sharpening and leather strop with yellow gold compound, But lately have been using a strop that is 12 inches long of pine with a very thin layer of rubber on both sides and on one side is 600 grit wet/dry sandpaper and the other side is 2000 grit wet/dry sandpaper.

Power, I use my belt sander then either a loosely woven cloth wheel with the white compound or a leather wheel with the same compound.

In closeing, try several methods and see which one works the best for you.

I'm not very good at sharpening, but have had the best results with a cermaic stone.

MY husband built and gave me a power sharpener last year. I carve, he sharpens. He's getting pretty good at it. (I have the sharpest knives in town in my kitchen.)

Isn't it great to work with sharp knives? I can't imagine using dull tools when you know what sharp ones are like.
