Default Thank you Mrs Johnson

Thank you Mrs Johnsom for the Buffalo chip cookie recipe. My 9 year old GDaughter and I just finished baking a half a batch and they were de-lick- able.
For those not in the know, Mrs. Johnson is the wife aof a great carver who was in the Bishop class this last Oct and she brought the Buffalo Chip cookies to class. We enjoyed them. I thank my little bride for asking her for the recipe.

Ok, Here is the recipe in it's original state.


Buffalo Chip Cookies recipe
Bake 12-15 minutes at 350 degrees
I found out this,do not overbake or they will turn hard.

Cream together
1 cup Shortening
1 cup of Butter(no oleo or marg)
4 eggs
1 tsp Vanilla

Then add
2 cups white sugar
2 cups brown sugar
2 cups Old Fashion oats(no quick oats)Why, I don't know.

Shift together 4 cups of Flour
1 1/2 tsp baking soda
1 1/2 tsp salt
Mix with above


Then Stir in 2 cups of corn flakes
2 cups of Choc Chips
1 cup of coconut
1 cup of nuts
mix well and measure in 1/3 cup amounts. She said she place 6 per sheet. Ihad a couple restuarant size cookie sheets and got a dozon on each one.
However, I cut the recipe in half except for the vanilla,coconut, choc chips and nuts.
If you make the whole batch get ready for a work out on your arms on stiring or have a heavy duty mixer.
Cutting in in half and use the 1/3 cup amount, I got 3 dozen and a couple extras.


Just my little tips.
Good with milk or coffee but not dunking.
If the cookies turn hard in the container, put a slice of bread in the container and the mositure from the bread will soften the cookies or a couple slices of apple in the container will keep the cookies soft.
To keep them from over baking, I take them out a few minutes early and they keep on baking from the heat within the cookies. I take the off the sheet at 15 minutes and place them on a wire rack or racks if you have more.
MMMMMMMMMMMM MMMMMM good.
