I want to try this sweet potato carving with a day camp I am doing (4th and 5th graders) Do we need to peel the potatoes first?

According to Tom Wolfes Book on the subject .. no .. the carving will do that in most areas Gene

Sometimes I peel them first and sometimes I don't. If I don't peel them first sometimes I have a little trouble getting off little bitty pieces of the peel that may be left on.
