Default Newbie first project

Hi guys, just after a few tips, I have a full set of opinel knives and a 12 piece wood carving set and I would like to carve something into a stick,could someone recommend a good easy first project and the best wood.

Here is an excellent free tutorial:
Woodcarving, Carving Wood Spirits 1, Instruction and Patterns

Almost any species will work. I like Maple, Dogwood and oak saplings in that order. Green wood is easier to carve.
