You asked if most fish carvers use airbrushes to paint instead of doing it by hand...and it depends on what "look" they're after. The airbrush, once mastered, can give you a very professional look. In our club, some of the oldest guys had trouble using the airbrush--their old fingers just weren't as agile as needed to work the trigger effectively. And if you don't use a good quality of paint, it be a challenge.
I don't do fish very often any more, but I got a basic set of airbrush paints from a taxadermy supply--they had it for taxadermy OR wood projects--and included paint charts for several kinds of fish.
If I was carving a fish out of oak, I would definitely be using power. Yikes but that's hard wood to start with!!!
