welcome, I don't think you find a nicer or more helpful group of people then right here,
I love the cottonwood carving as you can let your imagination take over
here are a couple of excellent books/DVDs to help you get started

Illustrated Guide to Carving Tree Bark by Rick Jensen
and Carving Found Wood by Vic Hood and Jack Williams

and a really good DVD Carving Magical Tree Houses with Rick Jensen

with all the grit and dirt in found wood it does dull your knife very fast, so keep the honing strop close by

where in Canada are you from??
