Default Florida Holly/Brazilian Pepper

Any of you southern carvers here tonight I have a question. The field behind my house is covered with pepper trees. It seems that they grow like lightening and are straight as an arrow flies. I know that they are on the destroy list, Florida considers them to be a hazard. Does any one know if they carve well?? They seem to be perfect for walking sticks. 1 1/2 in diameter and some are ten feet tall. I think I will cut a few and try them as soon as they dry. Any opinions will be appreciated. ??? ??? ???
