Default Dogwood--for carving?

I found two pieces of dogwood that I had stuck away to dry about 5+/- years ago. It has been so long that I forgot what I got it for.It is only two small pieces of the tree,one about 5'in dia. and 4' long and the other is 4-5' in dia. and 2 1/2-3' long. Is it hard or soft and does it hold detail well? What color should I expect the wood to be? Whatever I carve out of it will have to be small,such as chess pieces,but I don't even have a clue about this wood.Any and all response will be greatly appreciated.

It is a white wood ,like basswood but it is harder.Years ago I carved smoking pipes with that wood .We would carve daisey like flowers over the flaws and knots to hide them.Then we would stain and polish.

I think you you carve dogwood blossoms out of one, it's like ironical or somethin! :P
