Cool cypress knees

Bought a cypress knee at the flea market .the person who sold it to me said he had it for over 20 yrs .don't know much about them except that they grow in swamps.And are used to carve on .this one looks like a double knee(it has two points and is stuck together at the bottom )It is pretty dark in color kind of a dark gray .IT also has some insect holes in the bottom .

Do you think it might be to dry to carve?After 20yrs.

I have carved some knees that were pretty old with no problem. Maybe not 20 years but close to it. Just get out your tools and have at it.
