I have several great old Food Carving Knives neither my wife or I use any longer and wonder if the they would make good wood carving knives? They have always held a great edge but have really cheap handles so neither my wife nor I use them any longer and wonder if their 'steel' would be a good candidate for making some good carving knives if I reformed the steel into wood carving blades with my own carved handles? They are not made out of stainless steel... Thanks in advance... Kenn - the Old Codger

I'd try it. Since you don't use them for food, you have nothing to lose if it doesn't work. As long as the blades are not cheap, thin stainless. Let us know how it worked out.

Yup they'll work fine. I've done it and they're sharp. Here's two I did--one's a drawknife , the other is a Swedish style carving knife. I never tried one myself, but I met a gentelmen that makes and only uses that kind of knife, he claims they are the best. Dave |

I have made a few detail knives from kitchen knives. They work great and hold an edge well.

just make sure u have a cup of water u can stick the blades into as u grind to keep them cool... u dont want the "temper" to change
