Any of the compounds you listed can be used. My big strop is used with engine polishing/valve lapping compound and works terrific. My small strop is used with red jeweler's rouge and keeps my detail knives and gouges sharp and mirror finished.

When you get right down to the basics, any fine abrasive works for a stropping compound. Paste is nice because it adheres to the strop better. Either of the polishing sticks you referenced should be fine. The compounds used to polish cylinder heads, I'm not familiar with, but if it's anything like valve grinding compound, it may be a bit on the course side depending on which type you have. Some of it is fine.

As to what type of glue to use to glue the leather to the board, plain old contact cement is fine. What the German word for it is I don't know, but it's the stuff used to glue laminate counter tops on. Goes on both pieces, let get tacky, the assemble.
