While browsing through a flea market the other day, I noticed some quality steak knives for $1.25 each. It dawned on me that one might regrind them into carving knives. Of course, there is the question of the quality of steel, but if they have quality handles there is a good chance that the steel will be good. Anyway, I bought two and reshaped them for carving. They took an edge pretty well but I havent tested them yet. If they turn out OK I'll make more. Most of them are stainless steel and most carvers probably prefer carbon steel but I have found that some stainless works quite well.
