Default Three Quarter Faces

i carve among other things, faces in logs. I've only done one with a three quarter turn it came out ok. I'm trying to carve an indian 3/4 turn screaming and holding a spear. I'm having having problems with the angle and the depth. Any suggestions would be helpful. thanks FEB
