Default Relief carving molding?

If you was going to carving my own molding for the living room what kind of wood would u buy. I carve animals on it. deer, bears, mouse, etc.
P.S. I have a new carving done when it dries I'll show it. Stain and linseed oil finished with oil paints. The right colors for the family coats of arms. Tony
