Unhappy chip carving problems

I have my knife very sharp but seem to find that I have touble making
clean cuts because the grain resists and I cant keep the knife going where I want it to.
Any ideas how I can solve this problem? any help will be appreciated .

Your knife may be very sharp, but it could be acting like a chisel. When you sharpen your knife be sure to do equal strokes on each side, it can have a bevel on one side. It made a difference for me. Skip

Which wood do you use? There are many types that just keep resisting no matter what you do.

Most of the wood I use for chip carving is basswood or butternut but I have worked in oak, walnut, pines, and many others.
