Gordo...the non-hardening clay is a great idea...I use that method. As to the angle of the eyes on raptors, the most important thing to remember is they are more foward facing than other birds. The prey birds/animals have their eyes more on he sides of their heads in order to get a wider view of their surroundings (in front, to the side and to the rear of them)...raptors, being predators, have forward facing eyes for better binocular vision and focusing.
Denny Rogers's book, "The Illustrated Birds of Prey: Red-tailed Hawk, American Kestrel & Peregrine Falcon" has a great anatomy section on all three birds. He draws the skull to show the angle of the eyes in their orbits and measures that angle.
