Default panel carving

I'm working on a panel carving of a labrador retriever. I noticed that quite a few of the panel carvings on this site are shaded. How is that done best? I used a photo and an art projector to estabilsh the outlines of my subject on a piece of cherry panel that I glued up and ran through my drum sander. I'm power carving it, and am a ways off from finishing the form. i just need to figure out how to 'finish' it. Suggestions?
