I found a good book on shore bird carving on ebay. I've got it in my shop, but I forget the exact name. It has a heron pattern. I carved a few herons from a copy of a picture. I enlarged it as big as I could on the copier, then cut it in 4ths and enlarged it more until it was about life-size, and traced it onto my wood for the silhouette, then took very small and thoughtful detail cuts as I looked at the original picture as well as Audubon books etc.
Have fun with it!

You can find a pattern for a Great Blue Heron in "Carving Large Birds" by Bill Dehos and Patrick Spielman, Sterling Pub.Co. ISBN 0-8069-4742-x.
Not sure wether this book is out of print or not.
For the Toucan, check this web page, it may be a stylized version but I believe it's a Toucan.

Hope this of some help.
