I did that dragon about a year ago out of Butternut. Your right the blank spot between the wings can be hard to carve, I couldn't get at it with even a coping saw without effecting the head. When I got it done I thought the butternut looked just right so I put an oil finish on it and set it on a shelf. I went away for a week and when I got back swmbo decided it needed painting and now it's an irridescent blue and purple.
