Say I wanted to make a large sign (see photo) that would require removing lots of background material, what would be the correct gouge to perform such a task? |

Most, if not all would be creamed off by a CNC router.

If you're planning on doing it with hand tools ie mallet and gouges, I'd use a #9 sweep, 35 or 40mm gouge for hogging out all that wood, and then a smaller #11 veiner for the "subdivision" section and then perhaps even a #1 for smoothing out the flat surfaces on the "Oak Grove" letters. Something that large, II would consider investing in a reciprocating carving tool...save my hands and arms from hogging off all that wood.
