Default Gouge's chip

Carving found wood and I have new gouges (Stubi ) and the gouge chip out. Is it because I have them sharpen for hand use and not mallet?

It could be alot of things, but my best guess would be the steel is too soft for what you are doing with the chisel. If the bevel is too low, that would compound the problem by further weakening the edge.

Actually, are you even supposed to use a gouge to pry with? I know it's tempting and easy to do if you aren't concentrating (I have that problem myself....concentrating, that is...) but I trained myself never to pry with a gouge. I think even if you don't chip the edge, you are probably rolling the edge just a bit, dulling the tool.....Just a thought.
