The standard process seems to be to saw into slabs, stack in a warm but dry area out of direct sunlight, and put little sticks between the boards so the air can circulate around them. The rule of thumb is to allow one year per inch thickness of the wood. Also cut several inches too long, as the wood will check (crack) at each end a bit. if you allow an extra six inches on each end of what you want to end up with, that should take care of the cracks.
