A light sanding with 220 grit paper takes off all the dirt and pencil marks as well as soften the cuts.

My uncle (who was a much more talented carver than I am) taught me to wash a carving with "simple green All-Purpose Cleaner" and enough water to rinse it off. Do this before finishing with oils, varnishes, paint, etc.
