I agree you need some protection on the knife hand. What I use is another glove on my right hand and have made a thumb guard for the thumb that works great. My wife broke her wrist and I watched while the Dr. made a cast for it after the origional wrap and plaster one. This one was a thin plastic material which was heated and wraped around the wrist and took it's shape perfectly. He cut the stuff with a scissors and used a heatgun to warm it to where it was soft and floppy. I asked him for the remainder of the piece he had cut it from and did the same as he had done but with a much smaller piece over and around the thumb. It does not get so hot that it is uncomfortable to mould with your bare hand. I found that it stuck to the weave of the glove so that it would need no additional adhesive. I did wet a piece of leather and mold it to the plastic guard as I did not like my knife hitting the plastic. My next one will be somewhat smaller than this one but it works great! Go to the local therapy people and ask for some material left over from a cast and try it!

I haven't been wearing a glove on the cutting hand, but then again I haven't been using a knife. I have been using a palm chisel set. About the only way I could cut myself on the right hand would be to switch hands.
