Anything by Harold Enlow.

Otherwise, caricature is still a broad field - I would recommend looking at some of the books that are available and choose something that fits the style that you want to carve.

I like Pete LeClair's books for variety. Marv Kaisersatt's is good for faces. The CCA has a few books that offer different projects from most of the members. Almost all the other CCA members have good books for instruction: Preston, Stetson, Batte, and Price would be recommendable (again depending on your interests). Tom Wolfe has a ton of books on many subjects that are relatively easy to follow. If you want caricature animals you can't go wrong with Desiree Hajny's book or Gary Gatte's.

There is a book on carving old world santa's that I always recommend to people starting to carve. The unique thing about this book is that it provides a pattern for all four sides of a carving as well as the top and bottom. It then gives instructions on how to proceed using those patterns. For example on the head it starts with the hat and there is a circle of the top pattern and a line on the side pattern and you have to carve away the section outside of the the circle on the top down to the line on the outside section and the line is different at the front than at the back. It forces the carver to think in three D. Great Learning Tool.
