I like all three....in the pictures I really cannot see any difference in the fnishes between them, of course in person there may be differences. I have tried a lot of different finishes, and have decided that if it is a good carving with a good paint job, that is all that really matters...variances in the final finish are mainly in the area of "nit-picking" as far as I can see...go with what pleases YOU the most and be happy with the result. All your bottlestoppers are excellently carved and look wonderful.
