I assume you want some type of caricature as you posted it here (caricature forum) .. Maybe a teacher with a book of the subject that she teaches. You could even do a likeness.

Is there an occasion for giving the carving? If Valentines day, carve a likeness of your son with a rose....

There are so many ideas you really can't go wrong. I would think about her personality and hobbies as well as her job. Does she like a good joke--then a fun caricature--is she romantic then a rose and if she is whimsical she would love a dragon. Then I'd look at her home and see how she likes to decorate and look at her colour choices-- Lot's of pinks or primary colours or earth tones--make sure the finished product will fit in with those colours( that's important to women). Does she like antiques or sleek and modern. Whatever you decide she will love if it is painted the right colour and fits her personality and decor. I know I am a girl!

If she is a teacher I bet she could use things like a pilgrim and Indian set for thanksgiving--pumpkins for Halloween etc.... most teachers like to decorate their classrooms and what an inspiration for the little kids!! How about seasonal pins to wear on a sweater?

A flower (rose) can represent gentleness, affection, and/or growth in a lovespoon... and you could also add a G clef to represent music. spoons are good classroom decorations, too. I liked that idea.

Rick... I have one daughter who is in the domestic services business and I carved her a carricature cleaning lady and another daughter who is an oncology pharmacy technician and I carved her a gowned up pharmacist so with your son's fiancee being a teacher and a pianist you've got more than enough subject matter to work with!
