Chris Pye has several Greenmen in his carving books, and most libraries have at least one of his books. I'm carving his Solar Green Man now, from his 'Elements of Woodcarving'.

Charles, Harley Refsal, who does flat plane carving has an 'almost fool proof' eye (three cuts) in his book about carving Oscar. Since it is 'almost foolproof' it is not going to be exactly what you want long-term, but it will sure get you started. Occasionally, he has his wife paint eyes on his pieces. Both of them seem to like that arrangement.
