I think the Murphy knife in Little Shavers beginners set will suit you fine. Of course, I don't know the design, but again, it should do all that you need - even if you may need a few intricate cuts. They (Little Shavers) will make sure that the knife is tuned for carving.

They also sell some brands of detail knives if you feel the need. The Ferguson and Shipley (Wells) brands have good detail options for fine details. Claude 'defined' the detail knife to a T. Again, the Murphy is a general-use knife and will suit you well.

I've made chess sets before & they can be a bit of a strain - 16 pawns etc... I made each piece starting at the castle or rook & moved in. I used butternut & left it natural & used redwood (actually broken window trim pieces) for the black pieces. It take time & EXPECT to make mistakes & have different sizes, but that's what makes it yours. Happy carving. Saftey first - wear a glove.

Its a huge undertaking for a first timer with no experience. I rule against it. You risk losing interest in the project and losing interest in the hobby. Take on eays beginners projects and everyone you finish will give you that much more confidence to do another!
