I am carving a sheep...( that looks more like a dog now, but I digress) and misplanned it and lobbed of its ears. Now this is a small carving. The ears are like 0.5cm. Should I glue wood to where they should be then carve or should i carve it then glue? or should i just pretend that sheep have no ears? =P

If the carving is a small one I'd just start over. You could glue on more wood for the ears on by sanding both areas perfectly smooth and flat and then use carpenters glue and clamps to get a good bond.

If the glued joint is really neat it won't be visible after carving - but it could take time to set up. Another idea (besides starting over) is just to change the proportions. Carve everything a bit deeper and you'll have wood for the ears again.
