Gene is a all around great guy and everyone has great words of wisdom, but i would reccomend sweet potatoes. a lot easier and less likely to cause an accident by trying to take to big of bites out of wood or soap. clay is good but sweet potatoes in my opinion is pretty close to the feeling of wood good luck and have fun, and as always have a first aid kit ready and a close eye and if possible teach in small groups so you can intervene more quickly in case of an emergency and to give more individual attention to each child.......

I will second Shade's suggestion of sweet potatoes
I have spent a coupla days with the 6 through 12 art classes here and we carved sweet potatoes they are easy to carve usieng a pocket knife or paring knife they shrivel up and change as the dry the kids really enjoy them
And actually yams are a little prettier than sweet potatoes

I used to teach cub scouts boy scouts using a pocketknife and Ivory soap. But before you ever let them handle a knife, the very first thing you want to do is teach them how to use knife safely. As someone else suggested get a copy of a boy scout handbook and teach them knife safety. You might even contact some scout leaders in your area to see if they can help you.
