I have a couple of Cape Forge detail knives. I also use a pfeil 1mm v gouge.
Works good so far,

Drake 1/16" and 1/8" V tools are well worth considering. Really superb tools.

I use a knife for 80% of my details.

For hair, I use a small veiner (3mm #11 or smaller).

My favorite knife for detail is made by Ralph Long - I have so many it's even named for me.
