What colors to use

Do you decide before you start a carving what colors you will use or do you decide after the piece is carved? Do you have favorite colors you like to use, say on a Santa, and use them ,or mix up the colors you use on each one you carve?

I'm probably in the minority on this, or even all alone, but;

My thought process is -
Will it look good with just a sealer and wax
If not will it look good with just a stain and wax
will it look good with just some highlights in color
(eyes, lips, etc) sealer and wax
finally color on the whole carving.
I guess what I am trying to say, is let the wood do the talking if at all possible. If not, give it a little boost with stain or paint.
