Default Carving tool application -

Can someone point me to a good reference for what cut each type of carving tool is designed for?

Go to any good carving tool catalog and look at the tool profiles, the tool will cut whatever shape the profile is. As for catalogs, put your name in for one or two and you will get dozens! Try Woodcarving Supply, that comes to mind and they will send you a catalog.
